“This looks just like the pizza the cafeteria served in middle and high school. I use focaccia bread as a fake-out for Sicilian pizza vibes, then I sweeten jarred sauce with hot honey and punch it up with herbs from my garden. Most people love the curb appeal first, then they try it and love the elevated flavors!”
For the sausage: Heat a medium saute pan with 1/2 inch olive oil over medium-high heat until shimmering. Add the sausage balls and cook, turning, until they are golden brown, 6 to 8 minutes. Remove to a paper towel–lined plate.
For the base: Place a large, empty baking sheet (that will fit both halves of the focaccia) in the oven. Preheat the oven to 400 degrees F.
For the sauce and cheese: Whisk together the pizza sauce, hot honey, basil and oregano in a large bowl. Toss together the mozzarella, Parmesan and Italian seasoning in a second large bowl.
Make the pizza: Ladle the sauce over the focaccia halves, cut-side up, then sprinkle with the cheese mixture. Add the sausage balls randomly around the top. Remove the baking sheet from the oven and quickly drizzle the pan with olive oil. Quickly place the focaccia halves on the baking sheet. Bake until the cheese melts but doesn’t brown, 10 to 12 minutes. Remove and cut each foccacia half into 4 pieces.
